My MasterClass subscription has taught me so much. Thomas Keller has three classes that are a must. They recently added a class on Modern Middle Eastern cooking by Chef Yotam Ottolenghi. His love of food, especially its heritage, is evident in his class.

Muhammara was the first dish of his I made. He has a whole section on mezze, small plates with big flavors that can be shared informally. Muhammara is a roasted red pepper and tomato salad that also includes garlic, toasted walnuts, and toasted cumin and coriander. The addition of pomegranate molasses and pomegranate seeds gives it a touch of sweetness.

It’s best as a dip or spread on warm pita bread.
