Crumpets
Our family is in love with England. I traveled there for the first time when I was 11 years old and have been there many times since, introducing my wife and kids to this amazing country. We always travel to Northern England and the Yorkshire countryside. One of our favorite towns is Whitby on the North Sea where majestic Whitby Abbey sits atop the bluff.
England used to have a reputation for bland and uninspiring food. But every time we visit we always enjoy the food. Go into any pub and you’ll be amazed at the quality and variety of food. Everything from Fish & Chips (yes, they are a must) to Yorkshire Pudding to Curry.
On one of our last visits we got addicted to crumpets. These griddle cakes are a cross between a pancake and an English muffin. They are light and fluffy and are great topped with something sweet or savory. I like mine with Marmite but they’re equally as good with some jam.
This recipe I adapted from the February 2021 issue of Food & Wine.
